
Would you try these lasagna potato boats 🥘🛶? Here’s what I thought of them and how to make them ⬇️ I’m rating them 9.8/10. Absolutely exceptional. ✅ Ingredients (serves 2): 2 large baking potatoes 250g 5% fat beef, seasoned 10ml olive oil Salt 1/2 chopped onion 1/2 chopped red pepper 6 chopped cherry tomatoes 1/3 chopped courgette 250g passata 60g mozzarella 15g butter 20g flour Skimmed milk to thin out Method: 1. Slice potatoes in half, then scoop out centre so you’re lift with 1cm thick potato boats 2. Smear olive oil evenly over potato edges, add salt and oven bake for 30-40 minutes at 200 degrees C 3. Meanwhile, prepare the beef sauce by adding 5ml olive oil, onion, cherry tomatoes, courgette and seasoned beef mince to a preheated pan. Cook for 5 mins, before adding passata and stirring through evenly 4. Prepare béchamel by melting butter in a small saucepan, followed by mixing in the flour and milk and stirring until thin and smooth 5. When potatoes are baked, remove from oven and add mozzarella, followed by beef sauce, then béchamel sauce and top with more mozzarella 6. Bake in oven for a further 5 mins and serve.
