
vietnamese-inspired chicken vermicelli bowls aka one of our go-to dinner meal preps π₯π₯β¨ recipe: marinade (I doubled this for 8 servings) - 8 chicken thighs - 1 tbsp olive oil - 1 tbsp sesame oil - 1 tbsp soy sauce - 1 tbsp fish sauce - 1 tbsp honey - 1 tsp garlic powder + onion powder nuoc cham sauce - 1/2 cup water - 3 tbsp fish sauce - 2 tbsp lime juice - 2 tbsp sugar or monkfruit - 1 tsp chili garlic sauce - 1 tsp garlic powder or fresh garlic other: - 2 packs vermicelli noodles - carrots - cucumbers - optional: lettuce - fresh mint and cilantro instructions: 1. Combine the marinade ingredients, then add to the chicken and toss until well coated. If you can, let the chicken marinate for at least 20 minutes. 2. Add the chicken to a greased baking tray, season with pepper, and bake at 400Β°F for 20β25 minutes, or until cooked through. 3. Cook the vermicelli noodles according to the package directions. For these ones, bring water to a boil, turn off the heat, then add the noodles and cook for 3β4 minutes. Drain and rinse with cold water. 4. Combine the sauce ingredients and prep your veggies of choice. 5. Assemble by adding the noodles, chicken, and veggies to a bowl.
