Plum crumble bars. Do you have a glut of plums and are wondering what to do with them? Make these amazing plum crumble bars! You can of course just buy plums if you’re not growing them. To make the crumble mix these ingredients in a bowl: 200g plain flour 150g light brown soft sugar 1/2 tsp baking powder 175g rolled oats 175g unsalted butter (cold and cubed) To make the plum filling heat the following in a pan until it all blends together. 500g plums (remove stones) 50g caster sugar 1 tsp vanilla extract 1 tbsp cornflour Use about two thirds of the crumble mix to line the bottom of a tray bake tin. Press the crumble mix down to create a solid base. Pour your plum mix over the crumble mix base. Use the back of a spoon to spread the plum mix equally over the crumble mix. Sprinkle the remaining one third of the crumble mix over the top. Bake in oven for thirty minutes at 180c. Remove from oven, allow to cool and then chill in fridge for at least two hours. The plum crumble should feel quite firm after having been in fridge. Use a knife to carefully cut your plum crumble into squares or bars. Enjoy and happy gardening / cooking Best wishes Simon
