Smokehouse Themed Lunch Boxes! I volunteered to make lunch for our local high school's robotics camp again today, and this time I went with a smokehouse-inspired menu. I found out at the last minute I was feeding 14 people instead of 12, so it was a bit of a scramble, but everything came together in the end! Each lunch included: BBQ pulled chicken sandwich (or a BBQ veggie burger for the vegetarian) Homemade coleslaw Upgraded mac & cheese Honey butter cornbread (texas toast for the vegetarian!) Corn on the cob Homemade(ish) banana pudding A few notes: • I used Costco rotisserie chickens to save time, then seasoned and heated the shredded chicken in the slow cooker with my homemade BBQ rub. • I gave the Stouffer's mac & cheese a little makeover with extra cheese, seasonings, and heavy cream to make it taste more homemade. • Every lunch was portioned individually so everyone got a little bit of everything without needing to make extra food for a buffet. • The vegetarian student got a BBQ veggie burger and Texas toast so their lunch still fit the smokehouse theme. • I designed another set of custom stickers in Canva to match the menu...completely unnecessary, but way too much fun not to do. 😊 #feedacrowd #budgetfriendly #lunchideas #mealprep #whatsinmylunch
