
Skewers are a summer staple. ☀️ Next time you fire up the grill, switch it up with my Sichuan Chicken Skewers recipe! Ingredient List Wooden Skewers, soaked for 1 hour prior to cooking 1 pound Boneless, Skinless Chicken Thighs cut into 1 inch cubes ½ Walla Walla or Vidalia Onion, cut into 1 inch chunks 1 Bell pepper, cut into 1 inch pieces Mala Spice Rub (recipe below) Sesame Dipping Sauce (recipe below) 2 Tbsp, scallion greens sliced Sesame seeds for garnish Instructions 1) Add chicken cubes to a large bowl, coat liberally with the Mala Spice Rub. Mix with a gloved hand to make sure to rub in all the spices. 2) Thread a chunk of onion onto the skewer (push down about 1 inch from the end), then add 2 pieces of chicken, a bell pepper and repeat until the skewer is full. Do this with remaining ingredients. 3) Spray your grill with coconut oil and place the skewers on the grill and cover. Cook the chicken for about 10-14 minutes with the lid closed, turning and spraying once halfway through, until the chicken is GBD (cook to an internal temperature of 165 degrees F). 4) Remove skewers from the grill, drizzle with Sesame Dipping Sauce, top with scallion greens and sesame seeds. Mala Spice Rub Ingredient List 4 Tbsp Sichuan Peppercorns 2 Tbsp Dried Fennel 2 Tbsp Black Peppercorns 6-8 Whole Dried Red Chillies 1 Tbsp Kosher Salt Instructions Combine all ingredients in a mortar and pestle or a spice grinder. Grind until a rough powder is formed.
