
🍅 CREAMY TOMATO, COURGETTE + BASIL DIP 🌿 If you’re going to make one dip this summer, it has to be this. It’s done in one pan, will take no longer than 15 minutes, and honestly is ABSOLUTELY delicious 🤤 ad | what brings it all together are @Mutti Pomodoro UK peeled whole plum tomatoes - which are perhaps the best example of a simple, high-quality ingredient that really does take taste to the next level - especially when paired with summer’s finest seasonal produce 🌞 this dip also works wonderfully as a spread for your toast + sandwiches, or a pasta sauce too. I served mine with toasted ciabatta rubbed with garlic 🧄 my full written recipe can be found below - so enjoy + as always, let me know if you give it a go in the comments👇 INGREDIENTS (makes a BIG bowl of dip, serves 6) 4 tbsp olive oil 2 tins @muttipomodorouk Peeled Whole Plum Tomatoes, separated from their juices 1 small shallot, finely diced 2 large garlic cloves, minced 1 medium courgette, roughly chopped Small bunch of fresh basil, stems finely chopped + leaves picked 2-3 tbsp nutritional yeast 1 tsp dried oregano 200g cream cheese (I use plant-based) Zest of ½ lemon Salt, pepper + ciabatta to serve METHOD 1. First, carefully separate the tomatoes from their juices. Then, add oil to a large frying pan on a medium heat. Once hot, add the tomatoes, shallot, garlic, courgette, basil stalks, nutritional yeast + oregano. Season generously with salt + pepper, give everything a mix, and gently cook for 3-5 minutes until fragrant. Then, pop a lid on for 2-3 minutes to help soften the courgettes. 2. Add the cream cheese, basil leaves, lemon zest, and some of the reserved tomatoey juices. Give everything a stir and then, with a masher or back of a wooden spoon, start breaking down the courgettes + tomatoes into a thick, saucy texture. Cook down for a further 3-5 minutes, check for seasoning, then allow to cool briefly. 3. Slice + toast your ciabatta, then get the dip into a bowl.
