Don’t feel like making a salad? Make pickles! 🥒 This is my favorite way to rescue those leftover vegetables hanging out in the crisper drawer—and turn them into crunchy snacks for the week. Quick brine: 1 cup water 1 cup distilled white vinegar 1 Tbsp sea salt 2 tsp sugar 1 tsp black peppercorns 1 tsp mustard seeds 5–6 garlic cloves 4-8 sprigs of fresh dill Optional: pinch of red pepper flakes 🌶️ Simmer the brine for 5 minutes, pour it hot over your vegetables, let the jar cool a bit, then refrigerate. Give them at least 24 hours, but 2–3 days is even better for flavor. Try this with cucumbers, carrots, green beans, radishes, red onions, cauliflower, peppers—or whatever needs rescuing in your fridge! And if you eat the pickles quickly, you can reuse the brine once for another batch. Keep everything refrigerated and use your senses—if it looks, smells, or tastes questionable, toss it.
