
Saw @dish.by.david ferment blueberries and decided to try it myself! Fermenting preserves them, making them last much longer (around 2-4 months or more if stored properly) and adds some live bacteria, essentially turning them into little probiotics. Cool, right?! Just submerge in a 2% salt solution and put in a cool, dry place (I kept in my pantry) for 4-7 days or so. If you don’t have a lid meant for fermentation, open to burp the jar and release some of the gases every day or so. Just a side note that heating them will kill those beneficial bacteria — wish I knew that before making my next video with them. lol Otherwise, use them like you would regular blueberries! Add to a yogurt bowl, top your oatmeal with them, add to a salad, etc etc. They’re still mostly firm, and have a really nice salty, tangy, slightly sweet flavor. Really yummy! Maximize the shelf life by keeping them refrigerated, covered in brine, in a clean glass container with a lid. You can keep them without the brine for around 2-4 weeks or so.
