Crystallized fruit is usually very straight forward but of course I wanted to make these pears extra special for Bae. Poached in the most delicious spiced pea flower tea, then thinly sliced and dehydrated. The last step is candying the slices by taking the sugar to the right temperature and working quickly before it dries and gets too sticky.
