Sweet, caramelised, juicy and finished with olive oil + sea salt 🍑🍨 [Ingredients] 2 apricots 1 plum 2 scoops vanilla ice cream 1 tbsp maple syrup Zest of ½ lemon Extra virgin olive oil Sea salt [Method] Cut the apricots and plum in half and remove the stones. Cook the fruit in a little olive oil until soft, sticky and caramelised. Add the maple syrup and cook for another minute until glossy and sticky. Add the lemon zest. Serve the warm caramelised fruit with two scoops of vanilla ice cream.
