
IDAHO BOY | CHEESE CHIPS Every family probably has their own version of this.. and apparently everyone calls it something different. 😂 But growing up, these were always “cheese chips” to me. Nachos were the kind with nacho cheese sauce.. cheese chips were the homemade version with grated cheese melted over tortilla chips. Mom and Dad worked a lot when we were kids and honestly none of us really knew how to cook yet.. so this became one of those simple little comfort foods we’d make all the time after school. Just chips, cheese, and Mom’s homemade salsa. Still hits every single time. Ingredients: • Tortilla chips • Freshly grated cheese (cheddar or Mexican blend is elite) • Homemade salsa Instructions: 1. Spread one even layer of tortilla chips on a plate. 2. Generously sprinkle grated cheese over the top. 3. Add another layer of tortilla chips and hit it again with more cheese. Don’t be shy here. 4. Microwave for about 30–45 seconds depending on your microwave. Watch closely. 5. The goal is melty.. not overcooked. If the cheese goes too long it gets chewy and hard. You want it just right where it’s soft, gooey, and pulling apart perfectly. 6. Serve immediately with fresh homemade salsa. That’s it. Poverty nachos. Cheese chips. Survival food.
