Oyster purists are boring ✋ grilled oysters with chilis, herbs, garlic, and lemon What you’ll need: Oysters-you’ll want to find some larger varieties with deep cups. 1/2 lb soft butter 1 c picked parsley 1 c picked dill 1 serrano- seeds and stems removed 3 cloves garlic Lemon juice Shishito peppers for topping Combine garlic, serrano, parsley, and dill in the food processor and blitz until you have a paste. Add the soft butter and blitz once more until you have a nice compound butter. Shuck your oysters and plop them into a separate container with their liquor for a moment. Place these in the fridge while you work or even better over a bit of ice. Wipe out the oyster shells and pipe in about a teaspoon of the herb butter. Place an oyster back in and head out to the grill. Place directly over some coals and cook for a minute. Flip the oyster and cook an additional 30 seconds. Remove and add in a touch of the reserved oyster liquor, a squeeze of lemon, and shishitos if you’re using.
