A common ingredient in Asian cuisine, less so in Danish. Bamboo (shoots)… “simply” grilled with sencha infused butter sauce covered on scattered wild rose petals, and finished with a spray of layered vinegars. How we found bamboo in Denmark was less simple. A country better known for pigs than pandas, finding the type of grass that towers overhead was not as easy as you would think. With some help from the local zoo, some enthusiastic bamboo growers, and an old temple in Bornholm we have been able to serve very DANISH bamboo during a few week. As with most things during this season though it must come to an end, we are playing with micro-seasonality after all, and no-one likes fibrous bamboo (apart from the aforementioned pandas). What is next? Wait and see…
