How do we pair our petit fours with coffee? When selecting the coffee to serve alongside the final dish on a menu, there are many factors to consider: origin, brightness, variety, and roast profile, to name a few. For our honeycomb dish from summer 2022, we chose a Kenyan coffee because of its fruity and light character. As with all pairings, it’s important to taste the combination together to ensure it’s as delightful as you expect. Sometimes the pairing works perfectly, while other times, it’s back to the drawing board!
