
Prep for a very last-minute BBQ 🥩 - “Yo BBQ at mine later!” - I get this message quite a lot.. and when I’m short on time, I like to keep things really simple. A couple of meaty starters, a few good steaks and some fresh salads, plus whatever your friends decide to bring… hopefully something.. I marinated these thin-cut short ribs with sea salt, black pepper, brown sugar, sweet paprika, garlic and onion granules, cumin and thyme. The sweet-spiced rub works so well over high heat, with the sugar caramelising to give you beautifully charred, sticky edges. Cut these up with scissors and serve in little baby gem cups with a Korean-style dressing and you’ve got an incredible starter. For the steaks, I kept a couple simply seasoned including the 50-day aged picanha, and coated two of the tenderloins in a smoky marinade before moving onto the salad. Again, nothing complicated. Just a sharp, spicy cucumber salad with rice vinegar, soy, sesame oil, mirin, crispy chilli oil and a little MSG. The whole prep took about 15 minutes and turned out pretty good. Nothing too crazy, just high-quality produce from @primegourmetdxb , simple seasoning and cooking everything hard and fast over charcoal.
