Large Shrimp, peeled and deveined▪️1 Tbsp Oyster Sauce▪️1/2 tsp Kosher Salt▪️1/4 tsp Freshly Ground Black Pepper▪️ Sauce:▪️2 Tbsp Oyster Sauce▪️1 Tbsp Sugar▪️1 tsp Fish Sauce▪️1/4 tsp White Pepper▪️ Noodles:▪️2 Tbsp Neutral Oil, divided▪️16 oz. Fresh Wide Rice Noodles (or sub 8 oz. Dry Rice Noodles)▪️3 Eggs▪️Kosher Salt & Freshly Ground Black Pepper▪️2 Tbsp Chopped Fresh Ginger▪️4 Garlic Cloves, finely chopped▪️2 Tbsp Sesame Oil▪️1 Large Bunch Chinese Chives (about 4 oz. / 2+1/2 Cups), cut into 1-inch pieces (or substitute 1 Cup Sliced Scallions + 1/2 Cup Sliced Regular Chives)▪️2 Tbsp White Vinegar▪️ 1️⃣ In a medium bowl, combine the shrimp, oyster sauce, salt, and pepper. Toss until evenly coated and let marinate for 15 mins. 2️⃣ In a small bowl, whisk together the oyster sauce, sugar, fish sauce, and white pepper. Set aside. 3️⃣ If using fresh noodles, gently separate them by rolling the stacks on a cutting board, then pulling them apart with your fingers. If using dry noodles, cook according to package directions, drain, and toss lightly with oil. 4️⃣ Preheat a large nonstick skillet or wok over medium-high heat. Add 1 Tbsp neutral oil, then add the shrimp and spread into one layer. Sear for 1-2 mins until golden brown on the bottom, then continue cooking while tossing for 1 more min until just cooked through. Transfer to a plate. 5️⃣ Add the eggs and season lightly with salt and pepper. Scramble until just cooked through, then transfer to the plate with the shrimp. 6️⃣ Add the remaining 1 Tbsp neutral oil along with the ginger. Cook, stirring, for 1 min until fragrant, then add the noodles. 7️⃣ Spread the noodles into one layer and drizzle the sesame oil around the edge of the wok. Sear for 2-3 mins until lightly charred, then add the garlic and Chinese chives. 8️⃣ Cook, stirring, for 1-2 mins until the chives are just starting to soften. Add the sauce and toss to coat the noodles evenly. Add the shrimp, eggs, and white vinegar, then cook, stirring, for 1 more min until everything is heated through.
