Creamy Bacon Ranch Chicken Baked Potatoes! Ingredients For the Chicken: • 2–3 large baked potatoes (baked ahead of time) • 2 large thin-sliced chicken breasts • Salt, to taste • Black pepper, to taste • Garlic powder, to taste • Onion powder, to taste • Paprika, to taste • Cajun seasoning, to taste • 1 tablespoon olive oil • 1 pack of Godshall’s chicken bacon sliced For the Creamy Ranch Sauce: • 16 ounces sour cream • 1 packet ranch seasoning mix • ½ cup crispy cooked bacon (from above) • 1 cup heavy cream For Topping: • Extra crispy bacon • Chopped green onions Instructions 1. Bake the Potatoes Bake your potatoes ahead of time until fork-tender. Set aside until ready to load. 2. Season the Chicken Season thinly sliced chicken breasts generously with salt, pepper, garlic powder, onion powder, paprika, and Cajun seasoning. 3. Cook the Bacon Heat olive oil in a large skillet over medium heat. Add chicken bacon and cook until crispy. Remove from the pan and set aside, leaving the drippings in the skillet. 4. Sear the Chicken In the same skillet, add the seasoned chicken breasts. Pan sear until golden brown on both sides. Remove chicken from the pan and set aside. 5. Make the Creamy Ranch Sauce In a bowl, mix together: • Sour cream • Ranch seasoning packet • ½ cup crispy bacon • Heavy cream Stir until fully combined. Add 2 tablespoons of butter to the skillet with the bacon and chicken drippings. Pour in the creamy ranch mixture and stir well. Simmer over medium-low heat until the sauce becomes smooth and creamy. 6. Finish the Chicken Return the chicken to the skillet. Cover, reduce heat to low, and simmer for about 20 minutes, or until the chicken is fully cooked and tender. Top with extra crispy bacon and green onions.
