
the perfect little hosting plate, so simple but tastes like you’ve put way more time & effort into it 🍅 crispy chorizo & tomato salad, burrata with some VERY crispy bread ingredients: 1 ball of burrata 60g chorizo 1/2 shallot, thinly sliced 1 tbsp cider vinegar 3 medium good quality tomatoes 1 garlic clove, finely grated 1 tbsp olive oil 2 stalks of basil, leaves only 1/2 lemon, zest and juice salt & pepper to taste 1. In a cold pan, crumble in the chorizo and fry on a low heat until crispy and the fat has rendered out leaving an oil behind. Make sure to keep stirring as you cook, as it burns really easily 2. Set chorizo aside in a bowl including the chorizo oil 3. Boil half of a saucepan of water and wash your tomatoes 4. Cut a cross into the bottom of each tomato, but don’t go too deep (just enough to cut the skin) 5. Place into the boiling water and boil for 1 minute 6. Place tomatoes into ice cold water and leave to cool completely 7. Once cooled, peel the skin off each tomato 8. In a bowl, add in your sliced shallots along with the vinegar and a pinch of salt and massage well into the shallots 9. Add the tomatoes into the shallot mixture along with the chorizo, garlic, olive oil, basil, lemon zest & juice and any extra salt and pepper to your taste 10. Mix well and leave to marinate until you toast your bread 11. In a frying pan, drizzle in some olive oil and fry the bread on each side until golden and crispy 12. To serve, rip the burrata onto the place and arrange into an even layer.
