
watermelon & crispy paneer salad π (serves two) for the salad base: 300g watermelon, cubed 1/2 red onion, sliced 180g mini cucumbers, smashed & torn spiced crispy paneer: 220g paneer 2 tbsp olive oil 1/2 tsp ground coriander, ground cumin & salt 1 tbsp sesame seeds 1. Cube the paneer into bite size chunks and place into a bowl 2. Pour over 1 tbsp of oil over the paneer followed by the spices 3. Mix well and leave to marinate for 10 mins 4. Heat a pan to medium heat and fry the paneer on each side until golden and crispy all over 5. Drain on kitchen roll to soak up all the excess grease green chutney dressing: 1/2 tsp ground cumin 20g sesame seeds 1/2 green chilli 1/2-1 lime, juiced (depending how tangy you want it) 3 sprigs of mint 1 handful coriander 30g olive oil 1 tsp honey 1 tsp yoghurt 1. In a pan toast the cumin and sesame seeds for a few minutes making sure they donβt burn - leave to cool 2. Once cooled, add the chilli, lime juice, herbs, olive oil, honey, a good pinch of salt & yoghurt into a blender and blitz until well combined 3. Add the sesame seeds & cumin and pulse a few times until combined but not completely blended to assemble: add the watermelon, cucumber and red onion into a bowl (you can add few extra torn herbs here if you wish too). Drizzle over a few tbsps of the dressing and mix well. Place onto a plate and add the paneer over the top followed by the rest of the dressing and enjoy
