La Cigale, a high-end French restaurant in San Francisco, is doing away with the tip lines on its checks, while also working to improve stability for its workers. Chef Joseph Magidow says it’s all part of creating a more equitable system in the face of so-called tipflation, delivering no extra service fees on meals, paying servers about $40 an hour and offering paid vacation to employees.
