1 C. Sugar
1 TBS. Cornstarch
1 tsp. Salt
1 tsp. Baking Powder
1/2 tsp. Baking Soda
1 1/2 tsp. Cinnamon 1/2 tsp. Nutmeg
1/4 tsp. Ground Ginger
1/8 tsp. Ground Cloves
2 Eggs
1 C. Pumpkin Purée 1/2 C. Canola Oil
2 TBS. Water 1 tsp. Vanilla
1/4 C. Roasted Pepitas (pumpkin seeds) Preheat oven to 350°F. Lightly grease and line a metal loaf pan with parchment. Whisk flour, cornstarch, salt, baking powder, baking soda, cinnamon, nutmeg, ginger, and cloves together. In another bowl mix together the pumpkin, canola oil, eggs, water, and vanilla until smooth. Add the dry ingredients to the wet and gently fold just until combined; do not overmix. Pour batter into the prepared loaf pan, smooth the top, and evenly sprinkle the roasted pepitas over top. Bake for 55 to 65 minutes. If needed loosely tent with foil if the top browns too quickly. Once finished baking remove and cool in the pan for 15 minutes, then remove and cool completely. Before slicing the Pumpkin loaf.
