
Honey-Garlic Pig Wings π―π Smoked over Cherry wood pellets from @Bearmountain BBQ π π» Pig wings are small cuts off a pork shank and shaped kind of like a big chicken drumette. They eat a lot like baby back ribs, but with way more meat on each piece. Truly one of the most underrated cuts in Barbecue π₯ πΉPig Wing Ingredients * Pig wings (pork shanks) * Low-sodium pork rub * 2 tbsp soy sauce * 4 tbsp melted lard * Honey garlic glaze (recipe below) * Cherry Bear mountain BBQ pellets πΉPig Wing Method: 1. Season the pig wings generously on all sides with the low-sodium pork rub. 2. Preheat your smoker to 250Β°F and smoke the pig wings until they reach an internal temperature of 165Β°F. 3. Place the pig wings in foil and drizzle with 2 tbsp soy sauce and 4 tbsp melted lard. 4. Wrap tightly and return them to the smoker. 5. Continue cooking at 250Β°F until the pig wings reach an internal temperature of 195Β°F and are tender. 6. Remove them from the foil and place them back on the smoker uncovered. 7. Brush generously with the honey garlic glaze. 8. Cook uncovered for another 10β15 minutes, until the glaze is sticky, glossy, and set. πΈGlaze Ingredients: * 6 garlic cloves, finely diced * 1/2 cup honey * 1/4 cup dark soy sauce * 2 tbsp rice vinegar * 1/4 cup water * 1 tbsp cornstarch * 1 tbsp cold water πΈGlaze Method: 1. Add the dark soy sauce, rice vinegar, water, and diced garlic to a saucepan. 2. Bring to a gentle simmer over medium heat and cook for 3β5 minutes, until the garlic starts to soften. 3. Stir in the honey until fully combined. 4. In a small bowl, mix the cornstarch and cold water together to make a slurry. 5. Slowly stir the slurry into the simmering glaze. 6. Cook for another 1β2 minutes, stirring constantly, until the glaze is thick and glossy. 7. Remove from the heat.
