Italian Wedding Soup with Chicken, Zucchini, Ricotta Meatballs 🥒 This is my summery spin on classic Italian wedding soup. Instead of the traditional pork and beef meatballs, I made tender chicken meatballs packed with shredded zucchini, ricotta, Parmesan, and lots of fresh basil. They get browned first, then finish cooking in a light, lemony Parmesan broth with vegetables and spinach. In hindsight, I think some diced zucchini in the soup itself would be delicious too. I cook the acini di pepe separately and add it to each bowl so it stays perfectly al dente and doesn’t soak up all that delicious broth as it sits.
