Ep.8 Honey Walnut Chicken Tenders Ingredients: 2 lbs Chicken Tenderloins 1 tsp salt 1 tsp black pepper 1 tsp garlic powder Spring onions, for garnish Batter: 1/2 Cup AP Flour 1/3 Cup Water 1 Egg Seasoned Flour: 1 Cup AP Flour 1 Tbsp Chicken Powder 1/4 tsp paprika 1 tsp black pepper 1 tsp garlic powder 1/2 tsp Chinese 5 spice 1/4 tsp mustard powder 1 tsp onion powder 1/4 tsp kosher salt Sauce: 1/2 Cup mayo 1 Tbsp Condensed Milk 1 Tbsp Honey 2 tsp lemon juice or to taste Lemon zest Candied walnuts: 1/2 cup walnuts 1/4 cup water 1/8 cup sugar Instructions 1. Pat the chicken tenders dry with paper towels and season evenly with salt, garlic powder, and black pepper. 2. In one bowl, combine all of the seasoned flour ingredients. In a separate bowl, whisk together the batter ingredients until smooth and lump-free. 3. Heat oil to 300°F. 4. Coat the chicken using a 3-step breading process. Lightly dredge each tender in plain flour and shake off the excess. Dip into the batter, then immediately coat in the seasoned flour, pressing firmly to create a craggy coating. 5. Fry the chicken at 300°F for 3 minutes. Increase the oil temperature to 350°F and fry for another 2–3 minutes, or until golden brown and the internal temperature reaches 165°F. Transfer to a wire rack. 6. Meanwhile, make the candied walnuts. In a small pan, combine the walnuts, sugar, and water. Cook over medium heat for about 5 minutes, stirring occasionally, until the syrup coats the walnuts. Spread them onto parchment paper to cool completely. 7. In a large bowl, whisk together the sauce ingredients until smooth. 8. Add the fried chicken to the bowl and toss until evenly coated in the sauce. 9.
