
Golden fish bites made for sharing. πβ¨ Tender cod, fresh herbs and Parmigiano come together in crisp little bites that disappear while theyβre still warm. Would you serve them with lemon, mayo or a spicy dip? π @Sebastian Fitarau Ingredients for about 20 fish bites Cod 1.5 lbs (700 g) - fillet Bread 3.5 oz (100 g) - crumb Parsley 1 tuft Thyme to taste Eggs 2 - (medium) Garlic 1 clove Fine salt to taste Black pepper to taste Parmigiano Reggiano PDO cheese 2.8 oz (80 g) - (to grate) Type 00 flour to taste For frying Peanut seed oil to taste Method Blend the bread crumbs finely in a food processor and transfer them to a bowl. Remove any bones from the cod fillets with tweezers, then pulse the fish in the food processor for a few seconds. Add the chopped cod to the bread crumbs. Wash and finely chop the parsley, then add it with the thyme, crushed garlic and grated Parmigiano Reggiano. Incorporate the eggs, season with salt and black pepper and mix until evenly combined. Shape about 30 g of mixture at a time into walnut-sized balls; you should get around 20β25. Coat each one in Type 00 flour. Heat the peanut seed oil to about 340Β°F (170Β°C) and fry the fish bites 2β3 at a time for about 3 minutes. Once golden, lift them out with a slotted spoon and drain on paper towels.
