Roasted Garlic & Tomato Butter for my “Just A Bite” series ep.6! 🧄🍅🥖If I say so myself, this qualifies as the perfect bite. The tomato butter is DELICIOUS. You will have quite a bit of it leftover but add it to pasta, toast, butter, eggs, fish, chicken, etc! Ingredients: * 4.5 oz tomato paste. * 1 garlic head. * 8 oz unsalted butter (room temp). * 12 basil leaves (chiffonade). * 1/3 cup parmigiano reggiano (freshly grated) + more for topping the baguette. * Salt and pepper to taste. * 1 baguette (sliced in half). * Prosciutto (1 slice per tartine). * 2-4 oz burrata balls. * Crushed red peppers for topping. * Chives for topping. * Olive oil for drizzling. DIrections: 1. Cut the top off the garlic, drizzle some oil and roast covered for 1 hour at 375F. 2. Preheat a saucepan for 2 min, add in the tomato paste and cook for 4-5 min on medium low heat to get rid of the raw tomato taste. 3. Add the butter to a bowl, add in the parm, basil, garlic, tomato paste, salt and pepper. Whisk until smooth. 4. Spread a thick layer of the tomato butter onto your baguette and grate a lot of parm on it. 5. Bake at 350F for 12-15 min or until deeply golden. 6. Add your prosciutto on top. 7. Cut up your burrata and add it on top of the prosciutto. 8. Drizzle olive oil, add chives, crushed peppers and add black pepper. #tomatobutter #easyrecipes #burrata #appetizers
