
Braised Soy Sauce Chicken Feet 酱香鸡爪 perfect with a beer 🍺 INGREDIENTS * 1kg chicken feet * 2 spring onions * 5 slices ginger * 5 cloves garlic * 1 tbsp Sichuan peppercorns * 2 tbsp Shaoxing cooking wine * 2 bay leaves * 3 star anises * 4–6 dried red chilies * 1 tsp Thirteen Spice seasoning (十三香) * A small handful of rock sugar * 3 tbsp light soy sauce * 2 tbsp dark soy sauce * Hot water INSTRUCTIONS 1. Add the chicken feet to a pot of cold water with the spring onions, ginger, Sichuan peppercorns, and Shaoxing cooking wine. Bring to a boil and blanch for 10 minutes. Drain and rinse with warm water to remove any foam and impurities. 2. Heat a little oil in a wok. Add the spring onions, ginger, garlic, bay leaves, star anises, and dried red chilies. Stir-fry until fragrant, then add the Thirteen Spice seasoning. 3. Add the chicken feet and stir-fry for 1–2 minutes. Add the rock sugar, light soy sauce, and dark soy sauce, then pour in enough hot water to fully cover the chicken feet. 4. Bring to a boil, then reduce to a simmer. Cover and cook for at least 25 minutes, or until the chicken feet are tender. 5. Remove the lid and turn the heat to high to reduce the sauce until thick and glossy. Enjoy!
