
Spring rolls for dessert? Your wish is my command! 👨🍳 INGREDIENTS 1 package Lumpia Wrappers, defrosted ahead of time so you can peel them easily 2 Bananas, peeled and cut into eighths (cut banana into quarters lengthwise, then cut the quarters in half widthwise) 1 bar 70% dark chocolate, finely chopped About 1 cup peanut butter 1/2 cup salted peanuts, roughly chopped Vegetable Oil for frying Suggested garnishes: ice cream, chocolate sauce, yogurt INSTRUCTIONS 1) Place lumpia wrapper on a dry cutting board with the point of one of the corners facing towards you (so it looks like a baseball diamond from above). 2) Spread 1 tbsp peanut butter widthwise 1 inch from the bottom point of the wrapper. 3) Place a banana spear on top of the peanut butter, sprinkle with chocolate, and top with 1/2 tbsp peanuts. 4) Roll your spring roll: Bring the bottom point closest to you (home plate) to the pitcher's mound, and roll it once on itself. Egg wash the remaining edges. Fold first and third base in towards the middle of the roll and roll it the rest of the way. Letting it rest on the seam. 5) In a heavy saucepan or cast iron pot, heat vegetable oil to 375 degrees Fahrenheit. Gently place spring rolls in oil, about 5 at a time (do not overcrowd your pot). Cook 4-5 minutes until golden, brown, and delicious (GBD). 6) Remove from oil and place on a plate lined with paper towels to drain. 7) Serve hot with a thick yogurt, ice cream, or chocolate sauce.
