Preheat oven to 350°F, and grease a 9x9 baking pan and set aside. 2. Prepare the chicken: In a medium bowl, combine the shredded chicken, buffalo sauce, and ranch dressing. Set aside. 3. Make the cheese sauce: In a large oven-safe skillet or saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1–2 minutes, stirring constantly. 4. Slowly whisk in the Carnation Evaporated Milk followed by the water. Continue whisking until smooth. 5. Add the ranch seasoning and garlic powder. Cook for 3–5 minutes, stirring frequently, until the sauce has thickened enough to coat the back of a spoon. 6. Remove from the heat. Gradually stir in the cheddar and mozzarella until completely melted and smooth. Taste and add salt if needed the ranch seasoning and cheeses will already add quite a bit of salt. 7. Stir in the buffalo chicken, then add the cooked cavatappi and toss until everything is evenly coated. 8. Top and bake: Sprinkle the remaining cheddar and mozzarella over the top. Bake uncovered for 8–10 minutes, or until the cheese is melted and the mac and cheese is hot and bubbly. 9. Finish: Drizzle with buffalo sauce and ranch dressing and garnish with chopped parsley or green onions.
