Sometimes you just need to make yourself one BIG cookie 🍪 Here’s a recipe for a single-serving (or shareable if you’re feeling generous) chocolate chunk cookie: Ingredients: 1½ tbsp unsalted butter, melted 3 tbsp light brown sugar 1 tbsp granulated sugar 2 tbsp beaten egg (from one large) Large pinch kosher salt Small pinch baking soda Dash of pure vanilla extract ¼ cup all purpose flour Roughly chopped semisweet or bittersweet chocolate, to taste Flaky sea salt Directions: 1. In a bowl, whisk together butter, both sugars, egg, salt, baking soda, and vanilla until smooth. Stir in the flour and chocolate until thoroughly combined. Cover bowl and refrigerate until dough is firm, at least one hour and up to three days. 2. Preheat oven to 350. Press dough into an approximate ½-inch-thick disk. Transfer to a parchment-lined or silicone baking mat-lined baking sheet. Sprinkle the top with flake salt. Bake until until golden brown and crisp on the bottom and just set in the center, 15 to 18 minutes. Let cool on baking sheet at least 10 minutes before serving.
