π DIABETIC-FRIENDLY CABBAGE LASAGNA π All the cozy, cheesy lasagna vibesβ¦ without the traditional pasta! πβ‘οΈπ₯¬ This lower-carb version swaps noodles for cabbage while keeping it packed with protein and flavor. π€€ π INGREDIENTS: π₯¬ 1 whole cabbage, quartered π₯© 1 lb 95% lean ground beef πΆοΈ 1 tsp paprika π§
1 tsp onion powder π 1 tsp chicken bouillon πΏ 1 tsp Italian seasoning π§ Β½ tsp salt π€ Β½ tsp black pepper π
1 (24 oz) jar tomato-basil sauce β I used Carbone π₯£ 1 cup reduced-fat cottage cheese π₯ 1 egg π§ β
cup grated Parmesan π§ 1 cup shredded mozzarella π₯ INSTRUCTIONS: 1οΈβ£ Boil the quartered cabbage for 3 minutes, then drain and carefully separate the leaves. 2οΈβ£ Brown the ground beef and season with paprika, onion powder, chicken bouillon, Italian seasoning, salt, and pepper. 3οΈβ£ Stir in the tomato-basil sauce and simmer for a few minutes. 4οΈβ£ Mix the cottage cheese, egg, and Parmesan in a bowl. 5οΈβ£ Layer the cabbage, meat sauce, and cottage cheese mixture in a 9x13 baking dish. Repeat until everything is used. 6οΈβ£ Top with shredded mozzarella. π§ 7οΈβ£ Bake uncovered at 400Β°F for 30 minutes, until hot, bubbly, and golden on top. π₯ 8οΈβ£ Let it rest for a few minutes, slice into 8 pieces, and enjoy! π π‘ TIP: Cabbage releases quite a bit of liquid while baking! I like using a turkey baster to remove the excess liquid from the baking dish after it comes out of the oven. This helps keep your lasagna from getting watery. π π ESTIMATED MACROS β 1 of 8 slices: π₯ ~310 calories πͺ ~24g protein π₯ ~15g fat π
